  • 4 Oz Plain Greek Style Yogurt

  • 4 Cloves Garlic (Very Finely Chopped or Grated)

  • 1 Oz Red Wine Vinegar

  • 1 Oz Olive Oil (Extra Virgin)

  • 1 Bunch Dill (Small Dice)

  • 1 English Cucumber (Seeds Removed and Diced into 1/4 Inch Slices)

  • 1 Tsp Kosher Salt

  • 1 Tsp Ground Black Pepper

Instructions

  1. Place the garlic in the bowl in which you will serve, and cover it with the red wine vinegar.

  3. Add the yogurt, and whisk until it becomes a paste. Refrigerate.

  4. In a sieve, place the cucumber, and cover with the remaining salt. Leave for 30 minutes to remove the moisture from the cucumber.

  5. When the cucumber is ready, add the dill and the cucumber to the yogurt, and whisk the whole lot together.

  6. Use the olive oil to garnish the top of the dish.

  7. Chill and serve.
