This simple dessert is the perfect way to use up slightly tough peaches. It also uses one of my favorite American spirits, Applejack Brandy.

Poached Peaches with Applejack Brandy Syrup Recipe

 

Ingredients

  • 4 semi-ripe Peaches or Nectarines (Cut in Half and Remove the Stones)

  • 1 Bunch Mint (Torn Roughly)

  • ½ Cup Applejack Brandy (or enough to submerge the fruit halfway through)

  • ½ Cup Sugar

 

Instructions

  1. Pour Applejack Brandy in a deep baking dish.

  2. Add sugar to the Applejack Brandy. Mix well.

  3. Place the halves of the stone peaches facing down so it soaks flat in the Applejack Brandy and Sugar mixture, and sprinkle with the torn mint.

  4. Cover with foil and bake at 300 degrees Fahrenheit for 25-30 minutes until soft.

  5. Serve by itself or with really good vanilla ice cream.
