Poached Pear & Blue Cheese Salad

A refreshing salad using pears poached in sweet white wine that is perfect as an appetizer or a light main dish. The poached pears, on their own, also work really well with vanilla ice cream as a dessert.

Poached Pear and Blue Cheese Recipe

(Serves About 4)

Ingredients​

 

  • 4 Ripe Pears

  • 1 Bottle Pinot Noir

  • ½ Cup Sugar

  • 2 Cups Water

  • 2 Cinnamon Sticks

  • Assorted Green Leaves

  • ½ lb Stilton (or other Blue Cheese)

  • 1 Cup Walnuts (Chopped)

  • ¼ Cup Extra Virgin Olive Oil

  • 1 Clove Garlic (Finely Minced)

  • 3 Tablespoons White Wine Vinegar

  • Salt (To taste)

  • Pepper (To taste)

Instructions

To Poach the Pears:

  1. Combine the wine, water, cinnamon sticks and sugar in a saucepan large enough to fit the pears.

  2. Bring to a simmer.

  3. Peel the pears (keeping them whole) and place in the pan of simmering wine.

  4. Allow to cook until the pears are soft but not mushy. This should be about 20-25 minutes.

  5. Remove the pears, cover and allow to cool.

  6. Then cut into slices along the length of the pear.

  7. Continue to simmer the wine until it becomes a thick syrup and then place in a bowl or a squirt bottle.

 

To Make the Vinaigrette:

  1. Place the minced garlic in a bowl.

  2. Add the olive oil and the white wine vinegar and whisk to make a vinaigrette.

  3. Season with salt and pepper.

 

To Assemble the Salad:

  1. Lay the salad leaves on the serving plates.

  2. Place a few slices of pear amongst the salad leaves.

  3. Crumble blue cheese over the salad.

  4. Place some walnuts on the salad.

  5. Drizzle the salad with vinaigrette.

  6. Drizzle the plate with a little of the wine syrup.

  7. Serve.
