For the Lobster:

  • 4 4-5oz Lobster Tails (Cut for Presentation)

  • 1 Stick Unsalted Butter

  • 1 Tsp Garlic Powder

  • 1 Teaspoon Paprika

  • 1 Teaspoon Ground White Pepper

  • ½ Teaspoon Salt

For the Crumb:

  • ½ Stick Unsalted Butter

  • 3 Cloves Garlic (Finely Chopped)

  • 1 Cup Rye Bread Crumbs

  • 1 Teaspoon Kosher Salt

  • 1 Teaspoon Ground Black Pepper

  • ½ Cup Parmesan (Grated)

  • ½ Cup Parsley (Finely Chopped)

Instructions

For the Lobster:

  1. Melt the butter in a small saucepan.

  2. Add the garlic, paprika, pepper and salt to the butter.

  3. Place in a bowl and into the refrigerator for 5 minutes until it begins to solidify but is not solid.

  4. Take the lobster tails and rub the top and underside of each tail with the butter mixture until it is all used up.

  5. Place the lobster tails in the refrigerator again so the butter can solidify on the tails.  This can be done some time in advance.

For the Crumb:

  1. Melt the butter in a frying pan on a gentle heat.

  2. Add the garlic and cook until soft.

  3. Add the breadcrumbs and combine well.

  4. Add the salt and pepper, and combine well.

  5. Remove from the heat and transfer to a bowl.

  6. Add in the parmesan and parsley.

  7. Place I the refrigerator until ready to use. This should help solidify the crumb.

To Prepare the Dish:

  1. Place the lobster tails in baking tray.

  2. Bake at 425 degrees Fahrenheit for approximately 10 minutes.

  3. Remove from the oven and sprinkle each tail liberally with the crumb mixture.

  4. Broil for a further two minutes until the crumb begins to become slightly crisp.

  5. Serve the tails.
