Greek Salad

Also known as Horiatiki Salad, this is a simple salad but filled with so many unique tastes. The flavor of the Feta cheese, the briny-ness of olives, the tastes of garlic and green bell peppers “cooked” in red wine vinegar, and lemon. The taste of real dried Greek oregano (if you can find it) but even the store bought if you can’t. For those of you have been to Greece, it will bring back memories. For those who have not yet been, it will make you even more keen to go.

Greek Salad Recipe

(Serves About 2-4)

Ingredients​

  • 3 Oz Feta Cheese (Cut into Slices)

  • 3 Garlic Cloves (Very Finely Chopped)

  • 1 Oz Red Wine Vinegar

  • Juice and Zest of 1 Lemon

  • 1 Red Onion (Rest in Water to Soften Then Thinly Sliced)

  • 3 Ripe Tomatoes (Cut in 1/8 Inches)

  • 1 Green Bell Pepper (Deseeded and Cut into Sliced Rings)

  • 12 Black Olives (Pitted and Cut in Half)

  • 1 Tsp Dried Oregano

  • 2 Oz Extra Virgin Olive Oil

  • Salt (To Taste)

  • Pepper (To Taste)

Instructions​​

  1. In a bowl, add the garlic cloves, red wine vinegar, lemon juice, lemon zest, and bell peppers. Toss together.

  2. Remove the onion from the water and add to the bowl. Combine, then allow to sit for 3-4 minutes.

  3. Add the black olives, tomatoes, 3/4 teaspoons of the oregano, olive oil, salt, and pepper. Combine together.

  4. Top with the slices of the Feta cheese, and sprinkle the rest of the oregano on top.

  5. Serve.
